Ingredients
- 2 cups chickpeas, soaked overnight and boiled
- 2 onions, chopped
- 3 tomatoes, pureed
- 1 tbsp chole masala
- 1 tsp ginger-garlic paste
- A tea bag (for colour), oil, coriander, salt
- 2 cups all-purpose flour, 2 tbsp yogurt, baking powder, oil for frying (for bhature)
Method
- Boil the chickpeas with a tea bag for a deep colour, then drain and discard the tea bag.
- Heat oil, saute onion till golden, add ginger-garlic paste and tomato puree, and cook until the oil separates.
- Add chole masala and the boiled chickpeas with a little water; simmer 15-20 minutes until thick and well flavoured.
- For the bhature, knead a soft dough with flour, yogurt, baking powder and water; rest a few hours, then roll into ovals and deep fry until puffed and golden.
- Serve the hot chole with bhature, sliced onion and pickle.
