Ingredients
- 2 cups besan (for fafda)
- 2 tbsp oil, 1/4 tsp turmeric, 1/4 tsp ajwain (for fafda)
- 1 cup all-purpose flour (for jalebi)
- 2 tbsp yogurt, a pinch baking soda (for jalebi)
- 1.5 cups sugar, cardamom, saffron (for syrup)
- Oil/ghee for frying, salt, water
Method
- For fafda: knead a firm dough with besan, oil, turmeric, ajwain and salt; roll and cut into long flat strips, then deep fry until crisp and pale golden.
- For jalebi: whisk flour, yogurt and baking soda with water into a smooth, lightly fermented batter (rest 1-2 hours if time allows).
- Make a one-string sugar syrup with sugar, water, cardamom and saffron; keep warm.
- Pipe the jalebi batter in spirals into hot oil, fry until golden and crisp, then dunk immediately into the warm syrup.
- Serve the fafda and jalebi together, traditionally with fried green chillies and a papaya sambharo.
