Ingredients
- 2 cups all-purpose flour
- 1/2 cup ghee, plus extra for frying
- 1 cup khoya (reduced milk solids)
- 1/2 cup powdered sugar
- 2 tbsp chopped nuts (almonds, pistachios)
- 1/4 tsp cardamom powder
- A few saffron strands, milk as needed
Method
- Knead a firm dough with flour, ghee and water; rest 30 minutes.
- Lightly roast the khoya until fragrant, then mix with powdered sugar, chopped nuts, cardamom and saffron for the filling.
- Roll a portion of dough into a small disc, place a spoonful of filling in the centre, gather the edges and seal into a stuffed ball, then flatten gently.
- Deep fry on low-medium heat until golden all over.
- Drain, cool slightly, and serve traditionally with a drizzle of warm ghee.
