Ingredients
- 2 cups whole wheat flour, water, salt, oil (for poori)
- 4 potatoes, boiled and mashed coarsely
- 1 onion, chopped
- 1 tomato, chopped
- 1 tsp mustard seeds, curry leaves
- 1/4 tsp turmeric
- 1 tsp coriander powder
- Oil, coriander, salt (for bhaji)
Method
- Knead a firm dough for the poori with flour, salt, a little oil and water; rest 15 minutes, then roll into small discs.
- Heat oil and deep fry each disc, pressing gently, until puffed and golden on both sides.
- For the bhaji, temper mustard seeds and curry leaves, saute onion till translucent, then add tomato and cook till soft.
- Add turmeric, coriander powder and the mashed potato with a little water to make a semi-thin curry; season and simmer 5 minutes.
- Garnish with coriander and serve the hot pooris alongside the bhaji.
