Ingredients
- 2 cups basmati rice, soaked
- 1.5 cups soya chunks, soaked and squeezed
- 1 cup yogurt
- 2 onions, sliced (half fried till golden)
- 1 tbsp biryani masala
- 1 tsp ginger-garlic paste
- Mint, coriander, saffron milk, ghee, salt
Method
- Marinate soaked soya chunks in yogurt, biryani masala and ginger-garlic paste for 15 minutes.
- Parboil rice with whole spices until 70% cooked; drain.
- Heat ghee, saute onions, then cook the marinated soya chunks until well coated and fragrant.
- Layer rice over the soya, top with fried onions, mint, coriander and saffron milk.
- Cover and cook on low heat (dum) 15 minutes; fluff gently and serve with raita.
