Boiled Egg Curry

Boiled Egg Curry

Ingredients

  • 6 eggs, hard-boiled and peeled
  • 2 onions, chopped
  • 2 tomatoes, pureed
  • 1 tsp ginger-garlic paste
  • 1 tsp red chilli powder
  • 1/2 tsp garam masala
  • 1/4 tsp turmeric
  • Oil, coriander, salt

Method

  1. Heat oil, saute onion until golden-brown, then add ginger-garlic paste and cook until fragrant.
  2. Add tomato puree, turmeric and chilli powder; cook until the oil separates from the masala.
  3. Add a cup of water and simmer for 8-10 minutes to develop the gravy, then season with salt and garam masala.
  4. Slit the boiled eggs lightly and add them to the simmering gravy so they soak up the flavour; simmer 5 more minutes.
  5. Garnish with coriander and serve hot with rice or roti.
