Ingredients
- 500g mutton, curry cut
- 2 onions, chopped
- 2 tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 1 tsp coriander powder
- 1/2 tsp turmeric
- 1.5 tsp red chilli powder
- 1 tsp garam masala
- Oil, coriander, salt
Method
- Heat oil, saute onion until deep golden-brown, then add ginger-garlic paste and cook until fragrant.
- Add tomato puree, turmeric, coriander powder and chilli powder; cook until the oil separates.
- Add the mutton pieces and sear well on all sides so they pick up the masala flavour.
- Add water to cover, cover the pot and simmer on low heat (or pressure cook for 5-6 whistles) until the mutton is fully tender — this takes longer than chicken, so be patient.
- Finish with garam masala and coriander; serve hot with rice or roti.
