Ingredients
- 500g mutton, curry cut
- 1 cup yogurt, whisked
- 2 onions, chopped
- 1 tbsp ginger-garlic paste
- 1.5 tsp kashmiri chilli powder (for colour)
- 1 tsp fennel powder
- 1/2 tsp garam masala
- Ghee, coriander, salt
Method
- Heat ghee, saute onion until golden-brown, then add ginger-garlic paste and cook until fragrant.
- Lower the heat and whisk in the yogurt gradually, stirring continuously so it doesn't split.
- Add kashmiri chilli powder and fennel powder; cook for a couple of minutes so the deep red colour develops.
- Add the mutton pieces, sear briefly in the mixture, then add water, cover and simmer (or pressure cook) until the mutton is fully tender.
- Finish with garam masala and coriander; serve hot with rice or naan.
