Ingredients
- 500g fish fillets (any firm white fish)
- 2 onions, chopped
- 2 tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric
- 1.5 tsp red chilli powder
- 1 tsp coriander powder
- Oil, coriander, salt, tamarind (optional)
Method
- Marinate the fish lightly with a pinch of turmeric and salt for 10 minutes.
- Heat oil, saute onion until golden, then add ginger-garlic paste and cook until fragrant.
- Add tomato puree, turmeric, chilli powder and coriander powder; cook until the oil separates.
- Add water to reach a curry consistency, bring to a gentle simmer, then slide in the fish pieces carefully — avoid stirring too much so the fish doesn't break apart.
- Simmer gently for 8-10 minutes until the fish is just cooked through; add a little tamarind for tang if desired, garnish with coriander and serve with rice.
