Ingredients
- 3 cups all-purpose flour
- 1/2 cup yogurt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp sugar
- 2 tbsp oil
- 1 tsp kalonji (nigella seeds)
- Coriander, chopped, salt, warm water
- Butter for brushing
Method
- Mix flour, baking powder, baking soda, sugar and salt; add yogurt, oil and warm water to form a soft dough.
- Cover and rest for about 2 hours until slightly risen and airy.
- Divide into balls, flatten each into a round or oval disc, and press a few kalonji seeds and a little chopped coriander onto the surface so they stick.
- Cook on a hot tawa until bubbles appear, flip, and cook until golden-brown spots form on the underside (or finish under a broiler for the classic charred top).
- Brush generously with melted butter while hot and serve immediately, stacked in a basket.
