Ingredients
- Kulcha dough: 3 cups all-purpose flour, 1/2 cup yogurt, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp sugar, 2 tbsp oil, salt, warm water
- 1 cup grated cheese
- A pinch of chilli flakes (optional)
- Butter for brushing
Method
- Prepare the kulcha dough and let it rest for 2 hours until slightly risen.
- Flatten a dough ball and sprinkle grated cheese generously in the centre. Gather the edges up and seal tightly so the cheese stays contained, then gently flatten and roll into a round or oval disc.
- Cook on a hot tawa until bubbles form, flip and cook until golden-brown spots appear on the underside (or finish under a broiler).
- You'll know it's ready when the cheese has visibly melted inside.
- Brush with melted butter, sprinkle chilli flakes if desired, and serve hot.
