Ingredients
- Kulcha dough: 3 cups all-purpose flour, 1/2 cup yogurt, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp sugar, 2 tbsp oil, salt, warm water
- 2 boiled potatoes, mashed
- 1/2 tsp cumin powder
- 1/2 tsp garam masala
- 1/2 tsp amchur
- Green chilli, chopped, coriander, salt
- Butter for brushing
Method
- Prepare the kulcha dough and let it rest for 2 hours until slightly risen.
- Mix the mashed potato with cumin powder, garam masala, amchur, chopped chilli, coriander and salt for the filling.
- Flatten a dough ball, place a portion of filling in the centre, gather the edges up and seal completely, then gently flatten and roll into a round or oval disc, taking care not to let the filling burst through.
- Cook on a hot tawa until bubbles form, flip and cook until golden-brown spots appear on the underside (or finish under a broiler).
- Brush with melted butter and serve hot with chole or pickle.
