Ingredients
- Naan dough: 3 cups all-purpose flour, 1/2 cup yogurt, 1 tsp sugar, 1 tsp baking powder, 1/2 tsp baking soda, 2 tbsp oil, salt, warm water
- 1 cup grated cheese
- A pinch of chilli flakes (optional)
- Butter for brushing
Method
- Prepare the naan dough as usual and let it rest 2-3 hours until slightly puffy.
- Flatten a dough ball and sprinkle grated cheese generously in the centre. Gather the edges up and seal tightly so the cheese doesn't leak out while cooking, then gently roll or pat into an oval, working quickly before the cheese softens too much from your hands' warmth.
- Cook on a very hot tawa until bubbles form on top, flip, and cook until golden-charred spots appear (or finish under a broiler).
- You'll know it's done when you can see the cheese has melted through the surface in places.
- Brush with melted butter, sprinkle chilli flakes if you like, and serve hot while the cheese is still stretchy.
