Ingredients
- 3 cups all-purpose flour, 1/2 cup yogurt, 1 tsp sugar, 1 tsp baking powder, 1/2 tsp baking soda, 2 tbsp oil, salt, warm water (dough)
- 1 cup grated mixed vegetables (cabbage, carrot), squeezed dry
- 1/2 tsp cumin powder
- 1/2 tsp garam masala
- Coriander, salt
- Butter for brushing
Method
- Knead a soft dough with flour, yogurt, sugar, baking powder, baking soda, oil, salt and warm water; cover and rest 2-3 hours until slightly puffy.
- Squeeze the grated vegetables firmly to remove excess moisture (a wet filling will tear the dough), then mix with cumin powder, garam masala, coriander and salt.
- Flatten a dough ball, place a portion of filling in the centre, gather the edges up and seal completely, then gently roll or pat it out into an oval, working carefully so the filling doesn't burst through.
- Cook on a very hot tawa until bubbles form on top, flip, and cook until the underside develops golden-brown charred spots (or finish under a broiler for the classic tandoor char).
- Brush with melted butter immediately and serve hot, stacked in a basket.
