Ingredients
- 2 cups whole wheat flour
- Water as needed
- Salt
- 1 cup grated cheese
- A pinch of chilli flakes (optional)
- Ghee
Method
- Knead a soft dough with flour, water and salt; rest 15 minutes.
- Divide into balls and roll each into a small disc. Sprinkle grated cheese over one half, fold the other half over, and pinch the edges to seal.
- Gently roll out the stuffed disc again into a slightly thicker flatbread, being careful not to press too hard or the cheese will leak out.
- Heat a tawa and cook the stuffed roti with a little ghee, flipping once or twice, until both sides are golden-brown.
- You'll know it's ready when the roti feels slightly soft in the centre where the cheese has melted. Serve hot, sprinkled with chilli flakes if you like a bit of heat.
